Cranberry Sauce Margarita

November 12, 2020 by Lauren Schmidt Leave a Comment

Your new favorite recipe using leftover cranberry sauce… Cranberry Sauce Margaritas! This holiday margarita recipe is a must have for any and all cranberry lovers, perfect for Thanksgiving or Christmas!

Cranberry Margarita Recipe Using Leftovers!

I joked when I was first making this cocktail that if I was personified by a drink it would be this one… because that is what food bloggers think about what food would play them in a movie… ANYWAYS

MARGARITAS

I love a margarita, anyone who knows me knows this. I also LOVE cranberries, based on my gazzilion cranberry recipes my readers know this.

So I put my two loves together into a beautiful margarita.

It is beautiful because it is so easy and lazy… we aren’t even making your own special simple syrup or anything we are simply borrowing taking a scoop of cranberry sauce off of the holiday table!

So let’s see what we need.

Close up of a glass filled with red cranberry sauce margarita, fresh cranberries, and ice.

Supplies

You will want:

  • Cocktail Shaker
  • Jigger/Measuring Tool for Alcohol
  • Glass

Easy right! AND if you don’t have a cocktail shaker no sweat you could even make this in a clean jar with a lid to shake it together, we don’t need anything too fancy here!

But if you happen to enjoy making cocktails from time to time and you don’t have a bar set with a shaker, jigger, and accessories. It might be a solid investment, they aren’t that much on Amazon and there are a ton of choices!

Margarita glass on a white plate filled with cranberries, the glass is filled with a bright red margarita and ice, garnished with more fresh cranberries.

Ingredients

This recipe doesn’t stray too far from a classic margarita, so if you make those often all you really will need in addition is some cranberry sauce:

  • Lime Juice – Best if fresh from the lime, 1 ounce is usually equivalent to 1 medium lime
  • Cointreau (or Triple Sec) – I have been making these with cointreau but triple sec should work just as well, they are both orange liquors the biggest difference is price and alcohol percentage. Cointreau is going to be a little bit more money but the alcohol percentage will be over double that of triple sec, so if you like a strong drink this is your choice. Triple Sec on the other hand has a very familiar flavor but is less money and with a much lower alcohol percentage, this doesn’t have to be a bad thing, I like to use triple sec when I plan on having a couple of drinks
  • Tequila (Blanco) – The tequila industry is changing fast, with the introduction of many more options of resporados (aged tequilas) there are so many options, this drink though is great with your favorite classic blanco, which my favorite right now is still George Clooney’s Casamigos
  • Homemade Cranberry Sauce – Here is my Easy Cranberry Sauce Recipe

How to make a Cranberry Sauce Margarita

  1. Add all ingredients to a cocktail shaker with a handful ice. Shake until ice cold.
  2. Pour into a glass, add additional ice if needed, garnish with fresh cranberries. (If preferred strain the margarita if you don’t want clumps from the sauce.)

Tips, Tricks, and Questions

  • Cranberry sauce has to be homemade, any homemade kind will do whether you’ve flavored it or not. The store bought canned stuff will not work for this recipe, sorry!
  • If you want to make some cranberry sauce specifically for this drink you may follow my recipe here
  • If you are looking for a little added sweetness I suggest adding a dash of orange juice

Homemade Cranberry Sauce Recipe

November 10, 2020 by Lauren Schmidt Leave a Comment

Homemade Cranberry Sauce is so easy to make! It only takes a few minutes on the stovetop and you can flavor it how you you like it! It is seriously a must have for Thanksgiving!

A clear bowl full of bright red homemade cranberry sauce sitting on a wooden cutting board with a spoon in the sauce, next to the cutting board is bunch of loose fresh cranberries.

Fresh Cranberry Sauce Recipe

Everyone needs cranberry sauce on the holiday table right? To me you truly can’t have a thanksgiving meal without it.

The sweet yet tart flavor of the sauce is the perfect accompaniment to the rich and savory feast of turkey and potatoes.

One of the best parts is that it couldn’t be easier to make!

If you are looking for more cranberry recipes try Cranberry Fluff with Canned Cranberries or my Cranberry Smoothie.

Supplies

You don’t need a lot to make cranberry sauce, it comes together fairly easy on the stovetop:

  • Measuring cups and spoons
  • medium sized saucepan
  • whisk and rubber spatula

Ingredients

Here is where my cranberry sauce will differ slightly from the standard version…

To make cranberry sauce you really only need water, sugar, and fresh cranberries.

I think that it is fun to add a little extra flavor so I do that by using the following, just to give it a little extra pizazz!

  • apple cider – using apple cider gives the sauce a little more of an in-depth flavor, the sweet apple flavor helps round out the tartness slightly but is not overpowering
  • sugar – I use plain sugar but if you wanted to use brown sugar that would probably taste great here as well
  • fresh cranberries – you will need 1 bag for this recipe, you can cook it from frozen if that is what you have, remember cranberries are very seasonal so if you love cranberries makes sure to always grab an extra bag for the freezer (they freeze really well) so you can have them throughout the year
  • cinnamon sticks – just the addition of a cinnamon stick gives it that little bit of flavor boost that complements the cranberries well, if you aren’t a fan of cinnamon you may leave it out, if you are a super fan of cinnamon you can use 2 cinnamon sticks

For a complete detailed list of the ingredients continue towards the bottom of the page.

Ingredients needed to make cranberry sauce laid on a table including fresh cranberries, apple cider, sugar, and cinnamon sticks.

How to make Homemade Cranberry Sauce

Place all ingredients in a saucepan. Over medium heat to bring to a simmer.

Once you are at a simmer reduce to medium-low heat to continue to simmer 15 to 20 minutes. Stir occasionally until sauce thickens and cranberries have popped.

Remove from heat, let cool slightly before serving.

Bowl of cranberry sauce on a wood cutting board with loose fresh cranberries all around.

Tips, Tricks, and Questions

  • You can use a different liquid in place of the apple cider like just plain water or orange juice!
  • A higher heat boil might cause the cranberries to foam, keep at a medium heat.

Can I make this ahead of time?

Yes you can. Just keep it in the fridge in an airtight container. You may reheat if you wish or just serve it chilled!

Make this your own!

  • Instead of apple cider use orange juice or water
  • Add in other spices beside cinnamon, maybe a dash of ginger, nutmeg, or cardamom
  • a little citrus peel like orange or lemon would be delicious
  • add in a little whiskey or brandy for an extra flavor punch

You really can play around with cranberry sauce, as long as you keep the ratio of liquid to cranberries you can truly make it your own!

Rice Pilaf with Cranberries

September 29, 2020 by Lauren Schmidt Leave a Comment

Perhaps the best side dish ever this Rice Pilaf with Cranberries pairs perfectly with so many meals like chicken and seafood! Easy to make with only a handful of ingredients this rice with cranberries is one you will be making again and again.

This post may contain Affiliate Links.

Rice Pilaf with Cranberries in a white oval serving dish with a matte gold serving spoon, garnished with dried cranberries and fresh parsley.

Cranberry Rice Pilaf

I LOVE cranberries. Anything cranberry flavored or has cranberries in it, it could probably be assumed I love it. Dried or fresh I think they have such a unique flavor that adds so much to any dish.

So when I was playing around with different pilaf recipes this past summer to pair with grilled chicken I felt like I hit a huge winner with this dish.

It is simple yet delicious and can be paired with so many meals.

And if cranberries remind you too much of thanksgiving good news for you my favorite paring for this side dish is poultry. This could definitely be a new fun side dish to add to your Thanksgiving table if you are looking for something new!

Aside from Thanksgiving I actually have been pairing this recipe a lot with Mediterranean inspired dishes like my Greek Chicken Kabobs or Grilled Chicken Shawarma. It is really quick and simple to make so I found myself making this a lot during grilled dinners over the summer. Besides dried cranberries are all-year-round food!

A white serving dish with a gold spoon in white rice pilaf with dried cranberries and fresh parsley.

So what is Pilaf and how it it different from Rice?

Pilaf is rice, Pilaf actually refers to the method of cooking the rice. And as Americans we are actually being redundant when we say Rice Pilaf, but that is a whole rabbit hole we could go down.

Pilaf refers to how the rice is cooked. Traditionally Pilaf is made by cooking the rice with broth, spices, and other add-ins such as meat or veggies. Whereas just plain rice you cook with water.

So this is a Rice Pilaf with Cranberries. Pilafs in general are a pretty global dish, although they will differ greatly region to region by using local items. So really some of the most famous regional dishes are spinoffs of rice pilaf, in India the famous Biryani dish is actually a form of Rice Pilaf as well as the Spanish Paella.

But this side dish keeps it simple…

Ingredients

The nice thing about this side dish is that most of the ingredients are pantry items. You will need:

  • butter – Unsalted works best.
  • white or yellow onion
  • white rice – A longer grain white rice like basmati or jasmine works best.
  • bay leaf
  • better than bouillon chicken base – One of my favorite fridge items, but if you don’t have any regular chicken broth can be used.
  • fresh parsley
  • dried cranberries

For a complete detailed list of the ingredients continue towards the bottom of the page.

Ingredients needed for cranberry rice pilaf laid out on a table with a kitchen towel.

How to make Rice with Dried Cranberries

This recipe should come together fast, the hardest part is probably dicing an onion!

Start by melting the butter in a small pot (that has a lid) over medium-high heat. Add the diced onion to the melted butter and sauté 1-2 minutes.

Next add the rice, bay leaf, and chicken bouillon base to the onions. Sauté 2-3 minutes spreading out the chicken base and slightly toasting the rice.

Add the water and cover. Bring to a rolling boil, then reduce heat to a simmer. Cook covered for 10 minutes until the rice is tender.

Take off the heat, remove the bay leaf from the rice and fluff the rice a bit. Gently stir in the cranberries and parsley into the rice, serve immediately.

Voilá so easy to make Rice Pilaf with Cranberries right?!

What Pairs well with this Cranberry Rice Pilaf?

I love this dish with poultry or seafood like mentioned above, I also think it would be good with; Easy Roast Chicken with Vegetables, Sticky Orange Chicken Thighs, Oven Baked Shrimp Recipe, Sheet Pan Balsamic Chicken with Veggies

Can I use other kinds of rice?

The cooking time is specific to white rice. If you are wanting to use a brown rice or wild rice you are going to need to adjust your cooking times. If you have wild rice I suggest using this Cranberry and Wild Rice Pilaf recipe.

Apple Cranberry Salad with Turkey and Apple Cider Vinaigrette

November 21, 2018 by Lauren Schmidt 4 Comments

Apple Cranberry Salad with Turkey and a simple Apple Cranberry Vinaigrette
This post for Apple Cranberry Salad with Turkey and Apple Cider Vinaigrette is sponsored by Decas Farms Cranberries, all views and opinions are my own.

A couple of things I really love are loaded salads and cranberries. So when I was thinking what sort of fall and winter recipes I wanted to experiment with this year I knew a big salad with cranberries was a must. So I set out to make this delicious Apple Cranberry Salad with Turkey and Apple Cider Vinaigrette.

I’ve partnered up with Decas Farms Cranberries for this post, because I am such a big fan! If you have been a loyal Schmidty Wife follower you know each year I post about 3 cranberry recipes, maybe a bit excessive but probably not. I have always grabbed Decas Farms cranberries at the grocery store, both my favorite dried cranberries and fresh cranberries. So when they reached out I got so excited! And once I learned more about their company I got even more excited.

Decas Farms is a 3rd generation family run company that takes pride in their premium cranberries. Decas Farms produces their cranberries on family-owned bogs using sustainable agricultural practices, the Decas family owns over 400 acres of bogs in Massachusetts! So when my son is snacking on these cranberries by the handful I know that they are the best choice for him!

But you are here for an Apple Cranberry Salad with Turkey and Apple Cider Vinaigrette, so let’s break this salad down.

A bowl of Apple Cranberry Salad with Turkey and Apple Cider Vinaigrette

The Ingredients

Organic Dried Cranberries. How good are dried cranberries in a salad?! They always add that texture and flavor factor that makes a salad phenomenal. With a little bit of sweetness, a little tartness, you seriously can’t go wrong! Check out the recommended products below to order some for yourself!

Apples. Adding apples in a salad this time of year was a no brainer. I like to use a harder variety, my favorite are Cortland apples but a good Honeycrisp or Gala apple would be great. I love the sweet crunch it adds to the salad, but did you know that apples are also high in fiber and that is why they also make a great snacks, they keep you feeling full!

Turkey. I wanted to keep in simple as possible here, no turning on the oven or stove. So I grabbed some fresh deli turkey and chopped it up! If you are grabbing some from the deli counter, ask them to slice it a little thicker so the turkey doesn’t just rip when you are slicing it. It is also helpful to note that you will probably want to grab about half a pound, you probably won’t need it all, but then you can snack on some while you are getting dinner ready. 😉

Sharp Cheddar Cheese. In my opinion here, the sharper the better. In this salad I wanted the cheese to make a statement and not just blend in . So grab a block of sharp cheddar and cut it into small cubes for this salad. I was inspired by the pairing of apples with cheddar, isn’t it weird how they pair so well together!?

Walnuts. This salad definitely needed the touch of a crunchy nut, I selected walnuts for their crunchy yet soft texture and mild sweet flavor blended in with the other fall flavors. Walnuts are also full of super nutrients and only 1/4 cup provides more than the daily value of recommend plant-based omega-3 fats, not to mention they are heart healthy and support brain health!

For the vinaigrette I also wanted it to be simple. Three ingredients along with a dash of salt is all you need, Olive Oil, Apple Cider, and Apple Cider Vinegar. Together they make a trio of tasty dressing that is delicious but doesn’t take away from any of the ingredients.

all of the salad ingredients for the Apple Cranberry Salad

The Method

I love it when I get to the method part and it is like 1 sentence long don’t you!?

Gather your ingredients, chop them up, mix the vinaigrette, and toss all together in a large bowl!

apples, walnuts, dried cranberries, cheddar cheese, and turkey on top of a bowl of lettuce

This salad is great as a main dish for about 2 people or as side dish for about 4 people. With plenty of fiber and protein it is great on its own or I like to pair it with soup especially my Homestyle Crockpot Chicken Noodle Soup. And you should have enough cranberries left to make a great snack the rest of the week, seriously both of my boys go crazy for them!

Apple Cider Vinaigrette being poured onto an Apple Cranberry Salad with turkey, walnuts, and cheddar cheese

TIPS & TRICKS:

• You can swap out romaine for any other kind of lettuce such as baby spinach, iceberg, butterhead, or arugula (you’ll need about 4-6 cups)

• If you have leftover Thanksgiving or Christmas turkey, feel free to substitute the deli turkey for some delicious roasted turkey!

• Need Cranberries? Buy them below or locate them in a store by clicking here.

5 Minute Cranberry Orange Relish

October 11, 2016 by Lauren Schmidt 4 Comments

Sweet and tart Cranberry Orange Relish is a must have on the Thanksgiving table. This Cranberry Relish Recipe comes together fast with only 4 ingredients and 5 minutes of time, plus it is so easy to make-ahead.

This post was updated November 10, 2019 to add better instructions, helpful tips, and new photos.

Cranberry Relish Recipe

I have grown up with Cranberry Orange Relish always on the holiday table. It was always there and one of my favorite things on my Thanksgiving plate. I always loved how it offsets all of the other flavors on the plate, giving me bites that are bursts of flavor.

Just close your eyes and think of juicy warm turkey with a little bit of gravy, a small scoop of mellow mashed potatoes, and then a hit of tangy sweet acid from the cranberry relish, PURE PERFECTION MY FRIENDS.

I am literally drooling on my computer while typing this.

So this recipe is from my Grandma Wohlers and graces our Wohlers Family Cookbook that the family put together many many moons ago.  And my grandma would always make this, as well as my mother, and now I do.

Cranberry Orange relish in a white bowl on a table with a spoon

I did half the recipe from the cookbook recipe because everything in that cookbook is made to feed like 50 people but besides that I love how simple this recipe is and how it has stood the test of time.

Part of the reason I am pretty sure this has stood the test of time is because it is so stinkin easy to make.

You take fresh cranberries, oranges, apples, and sugar then grind them. That’s it.

So what can I do with Cranberry Relish?

It is perfect as a side on the Thanksgiving table but also can be used in many other ways. You can add it to the top of cream cheese or brie for an appetizer, you can add it to yogurt for a snack, you can use it as a topping on things like pancakes or waffles. Plus I love how this really can spice up leftovers from thanksgiving, just think how good this could be on a leftover turkey sandwich!

Cranberry Orange Relish with Apples

So what makes this relish recipe so great compared to others?

Apples

Many Cranberry Orange Relish recipes you find skip the apple and I am telling you it makes the biggest difference!

Since the cranberries and skin of the orange can be so tangy having a crunchy apple helps give this relish the rounded out flavor you are looking for!

cranberries, oranges, apples, and sugar, the ingredients for the best cranberry relish

Fresh Cranberry Relish Recipe

Like I stated above this recipe is very simple. It only takes a few ingredients:

  • Raw Cranberries
  • Orange
  • Apple
  • Sugar

Everything is chopped just enough to fit in the food processor. Which means yes keep the orange fully peeled as well as the apple. All you really need to do is take the core out of the apple. If the thought of leaving all of the skin and pith of the orange in tact scares you by all means take it off but make sure to zest the orange first before discrating the peel BUT I have always thought that the relish tastes just great leaving the skin and pith on the orange.

food processor with oranges, apples, and raw cranberries
sugar being poured into the food processor to make the relish

Now once the fruits are all in place add the sugar to the food processor.

Pulse until everything is finely ground together.

Either serve immediately or keep in an airtight container overnight, this Cranberry Orange Relish lasts up to 3 days.

Variations

Want to jazz it up a little more? Try the following:

  • Add ¼ teaspoon cinnamon
  • Add a dash of ginger
  • Add a flavored liquor
  • Add in chopped walnuts or pecans for an extra crunch

5 Minute Cranberry Orange Relish

Prep Time 5 minutes
Total Time 5 minutes

Ingredients

  • 2 cups raw cranberries
  • 1 medium orange
  • 1 medium firm apple*
  • 1/2 cup sugar

Instructions

  1. Ensure all fruit is washed and clean. Slice apple into chunks and remove core. Slice orange into large chunks (leaving peel on).
  2. Add cranberries, apple, and orange to food processor. Add sugar to the processor. Pulse the fruits until a relish forms and all the fruit is mixed together.
  3. Transfer relish to a bowl. Eat immediately or rest overnight covered in refrigerator. Keeps up to 3 days.

Notes

* A more firm apple like a cortland or honey crisp work best

Note: A typical bag of cranberries is approximately 2.5 cups. So it is OK to add a whole bag to the relish if the cranberries aren't going to be used for anything else.

The following is from the Original Post…

For the past 7 years of my life I have hated Thanksgiving, sad right? How could I hate a holiday centered around a magnificent feast of turkey, potatoes, gravy, cranberries, warm dinner rolls… a holiday I normally would love had been ruined by my job. Before I became a stay at home mom I worked retail. For 5 years I worked in loud and smelly young adult clothing store as assistant and store managers. My life literally revolved around Black Friday for those years. Especially in the last few years when stores chose to open Thanksgiving evening I had to be at my store ready to open at 4pm on Thanksgiving and I would be up all night managing the chaos that ensued. I worked my butt off at my stores and I managed to recieve a promotion to be a coordinator for store operations at my companies corporate headquarters. This was a big break for me in many ways and one of my favorite benefits of this was more normalized hours. But of course I was a member of store operations still heavily involved with day to day operations in the stores and my job was to be on the frontline of store communication so naturally we had to take shifts on Black Friday in case something majorly went wrong in stores we had to be there to solve and communicate the issues. Fast forward to my son being born a year ago, it magically worked out that my maternity leave was scheduled to end the Monday after Thanksgiving, this Thanksgiving was the most ‘normal’ thanksgiving I had been a part of my whole adult life. Besides the nerves starting about having to hand over my son to a daycare worker Monday morning it was a pretty great day! So now a year later I am so looking forward to Thanksgiving for the first time in a looong time! But you didn’t come here to listen to me rattle on about retail on Black Friday lets talk about super easy and stupidly simple 5 Minute Cranberry Orange Relish.

This 5 Minute Cranberry Orange Relish has been and always will be a staple at my families Thanksgiving table. Growing up I always enjoyed having this on my Thanksgiving plate because it is the perfect offset to all the other thanksgiving flavors. Now let me warn you this relish isn’t for the faint of heart a.k.a. some kids and picky eaters might not be huge fans because lets face it this dish is mostly made up of raw cranberries, but for me I love the addition of a fresh and colorful side dish!

Whether you are hosting Thanksgiving at your house or asked to bring a side, this option really couldn’t be easier. 5 minutes is all you need plus this is a great make a head option, in my option it is best made the night before to let to rest in the fridge overnight. It is as simple as cleaning and slicing the fruits, pulsing in the food processor, and adding some sugar. Bam you are done, easiest thing you will make all day!
